1 package White Cake Mix or Cherry Chip
1/3 cup oil
1/2 teaspoon almond extract
2 eggs
1 cup candied cherries or marachino cherries
1/2-1 c chopped nuts
Heat oven to 375 F. In large bowl, combine cake mix, oil, extract and eggs; stir with spoon just until thoroughly moistened. Stir in cherries. Shape dough into 1 inch balls. Place 2 inches apart on ungreased cookie sheets. Bake at 375 F. for 6-8 minutes or until edges are light golden brown. Note: For a new flavor try substituting 1 tsp. rum extract for the almond extract.

FROZEN FRUIT BARS
2 c. summer fruit (pineapple, oranges, and strawberries)
1 tsp. sugar (optional) (I use sugar substitute)
1 tsp. lemon juice
Puree fruit in blender, adding a teaspoon or two of water if necessary. Add sugar (if desired), a lemon juice and blend. Pour into bar molds or small cups and insert sticks. ...Freeze... until solid. For most fruit it'll be less than 50 calories a serving. Makes 4 (4 ounce) bars. This works great with the frozen treat makers at Prepared Pantry .

MOOKIES
Prepare any flavor packaged muffin mix according to the package directions -OR- make your own from scratch. Preheat the oven according to package directions.
Drop by level tablespoonfuls on to a lightly greased cookie sheet. Bake about ½ of the time specified for the muffins. When done, remove from the cookie sheet and place on a wire rack to cool.
Mookies are best when on the soft side and eaten warm. Put 2 together with a whoopie pie filling to make your own favorite mini-whoopie pies. The possibilities are endless!
